Maré de Sabores / A Tide of Flavors

Maré de Sabores offers catering for the all neighborhoods of Rio de Janeiro. We provide a unique experience of that values Marés gastronomic diversity and directly improves residents lives, both financially and in terms of social and personal development. Since 2010, Catering Maré de Sabores has produced over 1000 events, from coffee breaks, brunch, lunch to coqueteil and dinner. It has served over 20000 invitees, providing direct income for more than 100 families of Maré and making it feasible to sustain the entire Project Maré de Sabores.
Impact of your enterprise on sustainable development
Maré de Sabores catering service is responsible for financing the Project Maré de Sabores. It started upon women who took the Projects gastronomy courses and demanded to work on their own neighborhood and increase job and income creation there. We then established Maré de Sabores as a catering company. By providing catering for private and institutional events, women are directly remunerated for their work. It increases their income and therefore, enable them to be financially autonomous and reflect on gender issues, often encouraging women to break a financial cycle of dependency, based on husbands impositions and repression. Such cycle is often responsible for perpetuating domestic violence in the favelas, and this might be by far one of the worse problems women from Maré (and from the favelas) face. Aqui tem comida de favela ("here we have food from the favela") is Maré de Sabores motto. The gastronomy courses teach both international and Brazilian gastronomy, always mentioning the importance of using local and fresh ingredients, as opposed to processed food. Given that the favelas are frequently portrayed with stigmas of want and violence, the course aims to prove the favela as a territory full of creativity, power and individual aspirations for wider rights - never fully granted nor acknowledged by the government. Several teaching modules enable women to work both in the formal market or to establish their own startup. In addition to the cooking practice, classes are complemented by gender and citizenship discussions, aimed to empower women and encourage them to think about autonomy, self-esteem, self-awareness and their role and rights in society. The project gave birth to Casa das Mulheres - Women's House, a 3-storey building that has professional and fully-equipped kitchen and space for gastronomy and citizenship classes.
Sustainability and future plans
We generate capital with the events we produce. i.e: with a cocktail for 100 guests, in universities, companies, parties or gatherings, we can charge 39 BRL (10USD) for person. With this amount we are capable of covering supply costs, which account for 35% of the total amount; 25% is directed to generating direct income for women in Maré involved at the event's production and service; 20% cover the company's fix costs; 20% is directed to our original Project, Maré de Sabores. Maré de Sabores is project part of Redes da Maré, a NGO that is present in Maré for the over 20 years, with structuring projects oriented by five axes: Education, Communication, Art and Culture, Public Security and Territorial Development - Maré de Sabores' axis. Maré de Sabores has been undertaking gastronomy, gender and female entrepreneurship workshops for women of Maré for the past nine years; up to now, over 600 have been qualified. Catering Maré de Sabores was created precisely from the workshops and from the impetus women gained from it. Maré de Sabores became a legal company for social impact three years ago, aiming to give further sustainability to the Project and improve the life quality of women from Maré. Maré de Sabores annual budget is of 50.000 USD. If we produce 12 events/month, estimating 100 guests (10 USD each) we will achieve our goal of providing sustainability to the Project Maré de Sabores - something we wish to accomplish by 2021. It we establish a goal twice as higher, we might create new alternatives of entrepreneurship projects for the women of Maré, together with Maré de Sabores. Our goal is to establish it up to 2024.
Your profile as an entrepreneur
I am chef, born and raised in Maré, aged 31. I am the founder of Maré de Sabores alongside civil society organization Redes da Maré I am pos doctoral and master in Production Engeneering by COPPE/URJ, with a bachelor in Gastronomy. I coordinate Casa das Mulheres the Womens house and catering Maré de Sabores, which for me promotes social, racial gender engagement in the favela. Being an entrepreneur in the Favela is everywhere and comes as need for people's survival, and this what motivates us. I was given Agente Jovem de Cultura award, from the Brazilian Culture Department, in 2012.
